Quinoa Flakes Blueberry & Mango Hot Breakfast Bowl

So the other day I was walking down the aisles of whole foods with really no idea of what I was actually wanting to get. Honestly one of my favorite parts about going shopping is finding new products that I have no clue about but getting them anyways ha ha! So I found these quinoa flakes, and I figured that it would be sort of like oatmeal. I thought it would be super cool to experiment with and incorporate into recipes because quinoa has so many health benefits. So I developed this recipe, and it’s super yummy! You can totally use oatmeal in replace for quinoa if you don’t have any on hand, but this is definitely a nice switch for traditional oatmeal!

INGREDIENTS:

* 3/4 cup quinoa flakes

* 1 1/2 cup milk

* 1 Tablespoon chia seeds

* 2 teaspoons lemon juice

* 1 cup blueberries

* 1/2 a mango cut in slivers

Optional:

* 1 tablespoon sweetener (I like maple syrup)

* 1 scoop protein powder (I used Vital Protein’s collagen)

INSTRUCTIONS:

1. Add all the ingredients except the blueberries and mango to a small pot.

2. stir together, and let simmer on low medium until most of the liquid has absorbed into the oatmeal and has become the consistency you like. The amount of time this takes varies depending on the type of oats you are using

3. take the pot off the heat, and fold in your blueberries. You could also add your mango now, but I prefer to add it as a topping.

4. Lastly, add whatever toppings you choose. This is where I added the sliced mango, along with banana disks, more blueberries and coconut.
