Healthy Oat Graham Crackers

This light take on a classic treat is derived from oats and coconut sugar. You won’t have any problem quickly devouring these versatile graham crackers.

Ingredients

  • 1 1/2 cup oats

  • 1/3 cup coconut sugar

  • 1/2 teaspoons baking soda

  • 1/2 teaspoon cinnamon

  • 2 Tablespoons coconut oil

  • 1/4 cup water

Directions

  • Line two baking sheets with parchment and preheat an oven to 300 Fahrenheit.
  • Blend the oats until flour forms. Sift into a large bowl, along with the coconut sugar baking soda, and cinnamon.
  • Melt the coconut oil and add to the dry ingredients, along with the vanilla. Mix.
  • Add the water 1 Tablespoon at a time and use your hands to mold the mixture into a dough until it no longer sticks to the bowl. You may not need to use all the water. Be careful not to add too much or the dough will be too moist and sticky. 
  • Using a rolling pin, roll the dough into ⅛ inch thickness and cut it into squares with a pizza cutter.
  • Place the square on the baking sheets and bake for 10-15 minutes. 

Notes

  • Serve these yummy graham crackers as a snack, dip them in nut butter, use them as the base of a cheesecake, or indulge in some classic s’mores.
