The addition of rose in these tasty almond cookies makes them especially elegant and certain to impress whoever tastes them!

Ingredients

  • 1 ½ cup almond flour

  • ¼ teaspoon baking soda

  • 1 egg*

  • 3 tablespoon honey*

  • 2 tablespoon melted coconut oil 

  • 2 teaspoon vanilla extract

  • 2-3 teaspoon rosewater*

  • Optional: 1 teaspoon lemon zest

Directions

  • Line a baking sheet with parchment paper.
  • Whisk together the almond flour and baking soda in a large bowl.
  • Whisk the remaining ingredients in a small bowl and pour over the dry ingredients. Fold to incorporate until a thick batter forms. 
  • Place the batter in the fridge and allow to sit for 30 minutes. While the batter sits, preheat an oven to 325 degrees Fahrenheit.
  • Take the batter out of the fridge and roll it into balls composed of 1 tablespoon of batter. Gently flatten the balls onto the parchment-lined baking sheet.
  • Bake for 10-15 minutes or until the cookies are lightly browned and no longer glossy. 
  • Allow the cookies to cool before serving.

Notes

  • The egg can be substituted with a flax egg.
  • The honey can be substituted with maple syrup or any other liquid syrup.
  • Adjust the amount of rose water according to the potency of your rose water and personal preference.
