RAW Cranberry Apple Crumble – Vegan & Healthy

I’ve been super inspired lately to try to eat more raw meals because it is super easy for your body to digest. I have been trying to complete the small goal of trying to eat one fully raw meal a day. It may not be a big start, but it’s a start nonetheless! I apparently have to praise myself for starting even the simplest of tasks because I am a huge procrastinator at heart.

I find that the easiest time to squeeze a raw meal in is during breakfast. There seems to be millions of raw recipes for smoothies, overnight oats, and chia seed pudding. Don’t get me wrong, I am completely obsessed with all of those things, but I end up having them… very often. While I would love to say that having the same breakfast everyday is NOT in my vocabulary, I often get too lazy to be creative enough to try anything else. That is one of the reasons why I am in love with this recipe so much. It gets me out of my “breakfast runt,” haha.

Now, I’ve been calling this recipe a breakfast item, but that’s basically just because the ingredients are so clean that you can easily create an excuse to eat it for breakfast. It can easily be considered an indulgent dessert as well.

When I came up with this recipe, I happened to have cranberries on hand. I wanted to use them and ended up including them into this recipe. I think they taste amazing, and the tartness of the cranberries compliment the sweet, crunchy apples. I realize that not everybody has cranberries on hand, and you can totally sub the cranberries out if you prefer (see notes below the recipe). Either way, you don’t want to miss out on this scrumptious dessert/breakfast/I’m not discriminating when or how this can be eaten. (;

Alright, enough of my rambling, let’s get on with the recipe…

Hehe I lied, I’m back. Can we just talk about the fact that this is a PINK dessert? That alone is enough for me to want to make ANY recipe 🤪. Ok, back to the apple crumble.

RAW Cranberry Apple Crumble – Vegan & Healthy

Nothing is quite as refreshing as a RAW dessert! You will never have to feal guilty for satisfying your sweet tooth with this light and raw apple cranberry crumble!

Ingredients

  • for the apple mixture
  • 2 cups cubed apples, peeled (roughly 2 large apples)

  • 1 teaspoon lemon juice

  • for the cranberry paste
  • 1/3 cup apple sauce, raw

  • 1/3 cup fresh cranberries (See note)

  • 3 dates

  • 1/4 teaspoon cinnamon

  • 1/4 teaspoon fresh ginger

  • 1/4 teaspoon vanilla extract

  • water if needed (for thinning)

  • for the crumble
  • 1/2 cup nuts, preferably a mix – I used 1/4 cup almonds + 1/4 cup Brazil nuts

  • 2 dates

  • 1 teaspoon cinnamon

Directions

  • Add the chopped apples to a bowl, along with lemon juice. Set aside and allow the mix to soak.
  • Make the crumble by lightly pulsing the ingredients in a food processor until a crumbly texture forms. Make the consistency of the crumble to your preference. Lightly pulse it for a more coarse, crunchy crumble, and blend more for a powder-like, easier to eat crumble. Don’t over blend or it will become a powder.
  • Make the Cranberry paste by blending all ingredients in a blender until very smooth. If the sauce is too thick, add water one tablespoon at a time until it reaches an apple consistency.
  • In a medium sized bowl, stir the apple mix and cranberry paste together. Divide into two separate bowls and top with the crumble.

Notes

  • If you don’t like cranberries or don’t have any on hand, you can easily substitute them for any other tart fruit, such as raspberries, cherries, or even more apples.
