Coconut Banana Oatmeal + Berry Purée Topped W/ Honey & Pistachios

INGREDIENTS

For the Oatmeal:

3/4 cup oats

3/4 cup coconut milk

1/2 RIPE banana, mashed

1/2 teaspoon vanilla extract

1 teaspoon chia seeds

1 teaspoon flaxseed

1 teaspoon hemp seeds

Optional:

1-3 teaspoons coconut oil

2 teaspoons honey

1 scoop protein powder

 

For the Purée:

1/4 cup berries, frozen or fresh

1 teaspoon chia seeds

Splash of water if needed

 

For the Toppings:

2 Tablespoons de-shelled pistachios

1 Tablespoon honey

 

INSTRUCTIONS

1. Begin by adding all of the oatmeal ingredients to a small pot. Simmer on low medium heat until most of the coconut milk has been absorbed, or until the consistency you desire is reached.

2. While the oats are cooking, make the berry purée. You can mash the berries with a fork for a thick and chunky “jam” like consistency, or blend the berries in a blender to become thin and smooth. For both methods you may need to add a couple splashes of water to get the consistency you want. Once the berries are mashed up or blended, stir in the chia seeds.

3. Crush up the pistachios with a fork or knife.

4. When the oatmeal is done, pour into a bowl and assemble the ingredients.

5. Add your berry purée on top. You may not need to use all of the purée. I swirled the purée on top by pouring the mixture into a plastic bag and cutting off the corner so I could squeeze it out.

6. Drizzle a layer of honey and sprinkle on your pistachios. Enjoy!
