Vegan Cotton Candy Shake Made with Fruit

Who would have thought that a few healthy ingredients could result in a cotton candy flavored shake? It’s possible, and the recipe is right here!

This is one of those accidental recipes. We’ve all had them… the kind that is a complete coincidence as a result of something DIFFERENT that was attempted. Sometimes, those unexpected creations are actually the most revolutionary breakthroughs of the kitchen. I certainly felt that way when I first stumbled upon this drink formulation.

It came together one night when I was desperately scrambling for something to cure my sweet tooth. For the first time ever, I WASN’T craving chocolate, but rather, something light and fruity. I just didn’t know how to cope with this spring of the moment craving and began mixing random stuff in a bowl. I threw in frozen raspberries and blueberries, along with coconut milk, honey crystals (I know, VERY random), maple syrup and slivered almonds. I dove into the concoction and came to the realization that several bites contained a cotton candy-like tang.

 I was happily astonished by the discovery that a few simple ingredients I use quite often resulted in this flavor. But why did it taste like cotton candy THIS particular time? I eventually developed the assumption that it was the substantial dilution of raspberries with coconut milk to the point that a distinct raspberry flavor could not be pinpointed. In those bites, the fruit’s flavoring was not prominent.

 I wanted to test my theory the next day by whipping up a drink that was essentially a revamped, blended version of what I had created the night before. At that moment, this drink was born!

 I know it probably sounds absurd that this simple and healthy combo magically transforms into a cotton candy-flavored creation, but, after all, most cotton candy is fruit-flavored.

Ingredients

  • 2 frozen bananas

  • ½ cup canned coconut milk

  • ⅓ cup frozen raspberries

  • ¼ cup water

  • 1 Tablespoon maple syrup (or honey if not vegan)

  • 1/8 teaspoon vanilla extract

  • optional
  • this homemade coconut milk whipped cream

  • 1 Tablespoon cashew butter for added creaminess

  • healthy cotton candy

Directions

  • Add all the ingredients to a blender and pulse until it is completely smooth.
  • Pour the shake into two clear cups and serve as is, or top with THIS homemade vegan whipped cream (I layered it into the cups) and healthy cotton candy.

Notes

  • To go an extra step in presentation, you can blend half of the shake with blueberries instead of raspberries, and the other half with just raspberries. Swirl the two colors to create a lovely design.

Ps. after puzzling over how the diluted raspberries make a cotton candy shake, I remember the time I order a Starbucks cotton candy drink from the secret menu. It was made with several pumps of RASPBERRY syrup.
