Healthy & Zesty Apple Pie Oats W/ Cranberry Purée (VEGAN)

I woke up this morning to the realization that it was the first day of this season that felt even remotely close to fall. I was so excited because having a day below 80° is honestly a rarity here. I wanted to make a fall themed breakfast in celebration of the cool weather, and this is what I came up with. I feel like this is truly the perfect breakfast for the in between phase of fall and winter. It incorporates fall flavors with the apple and spice, but also includes winter with the cranberries. If i’m speaking honestly though, this oatmeal recipe is great to enjoy any time of the year. I just love warm oatmeal on colder days because it makes be feels so…um, warm lol.

Fun fact, I’ve never really been a huge cranberry fan. I’ve always looked at them in discussed when I remember their sour taste, but my disgraceful view has since been morphed. I was strolling across the grocery store aisles a couple days ago and decided that I would challenge myself to incorporate these sour berries is into something I would actually like (I know, maybe that seems dramatic, but it was a difficult challenge for me). That is when this dish came along. It was a huge pleasant surprise. In fact, I can happily say that I now genuinely enjoy cranberries. Yep, this dish is THAT good! so whether you’re in love with cranberries, or simply just need a way to use up some leftover after thanksgiving, or just want to make a super yummy fall/winter themed breakfast… or you are hungry, then this warm, comforting bowl of oats is perfect for you!

Healthy & Zesty Apple Pie Oats W/ Cranberry Purée (VEGAN)

Time: 15 minutes

INGREDIENTS

1.) For the Oats

  • 1 cup oats
  • 1 cup plant milk
  • 1/4 cup applesauce (or 1/4 cup extra plant milk)
  • 1/2 cup cubed apple (cut small)
  • 1 spotty banana, mashed
  • 1 teaspoon lemon zest
  • 1/4-1/2 teaspoon freshly ground ginger
  • 1/4 teaspoon Cinnamon

Optional:

  • Sweetener if needed
  • 1 scoop protein powder

2.) For the Cranberry Purée

  • 1/2 cup fresh cranberries
  • 2 teaspoons maple syrup
  • 2 teaspoons lemon juice
  • 1/2 teaspoon freshly ground ginger

INSTRUCTIONS

1. Make the oatmeal by adding all of its ingredients to a pot heated to low medium heat. Cook as long as suggested by the oat’s packaging. Stir the mix every once in while to prevent burning. If you would rather the cubed apple to be fresh and crunchy, opt by adding it towards the end of the cooking process.

2. While the oats are cooking, make the cranberry purée by adding the ingredients to a high speed blender. Pulse slightly. If the mixture is not blending, add water 1 teaspoon at a time till you get the desired texture. You don’t want the purée to be super runny so don’t over-blend the mixture. Instead, you can also mash the cranberries with a fork and then add the rest of the ingredients for a more chunky purée.

3. Pour the warm oats into a bowl and top with cranberry purée and more lemons zest.
