Dark Chocolate Cake Almond Flour Waffles { Paleo & Gluten Free }

This has seriously been one of my most favorite recipes so far from my blog! It is so filling and satisfying, it’s hard to believe that it’s actually healthy for you! If you have to try only one of my recipes, I would totally recommend this one because you really can’t go wrong! The almond extract makes it taste like a magical chocolate cake, and I still can’t get over how insanely delicious it is. Please go do your self a favor and make it right now!

INGREDIENTS

* 1/4-1/2 cup dairy free milk

* 1 tsp almond and/or vanilla extract

* 1 1/4 cup almond flour

* 4 eggs

* 1/4-1/3 cup cocoa powder (depending on richness preference)

* 1 tsp baking soda

* 1/4 cup honey or maple syrup

* Toppings

INSTRUCTIONS

1. Begin by mixing all the dry ingredients in a medium sized bowl.

2. Now in a separate bowl, combine all the wet ingredients and slowly Fold that mixture into the dry ingredients. You may need to add more flour if the mixture is too liquidy, or more milk if it is too thick. Since it is a waffle batter, You definitely want it to be on the thinner side.

3. Heat a pancake griddle to medium and add about 1/2 cup of the batter or enough to fill the whole surface.

4. Flip the waffle maker halfway through cooking it. The time will vary with all different types of waffle makers. Mine has a little light that goes off when I need to flip it. Keep in mind that you will need to cook the waffles longer than you would with a traditional recipe because of the almond flour.

5. when all your waffles have been made, you can either serve immediately with toppings, refrigerate them, or even freeze them. I added frozen raspberries, almond butter, cocoa nibs and hemp seeds.

*this make 3-4 VERY filling waffles. Also, they freeze super well. These are great to pull out of the fridge for busy school mornings, plus will keep you full till lunch*
