Sweet Potato Pancakes With Oatmeal And Flaxseed
I began by making one cup of sweet potato purée. I did this by baking two sweet potatoes that were cut in half and placed in the oven at 400 degrees for 40 minutes. I then combined all the DRY ingredients:
1 cup ground oat flour (pulse oats in a blender)
2 tablespoons ground flax seed
2 teaspoon baking powder
1 teaspoon ground cinnamon

In a separate bowl combine all the WET ingredients:
1 cup sweet potato puree
1 egg, large
1/4 cup maple syrup
1/2 cup almond milk, unsweetened

Next, slowly add the dry ingredients to the wet. You may need to add more milk if needed. Then all you have left to do is to fry them with some coconut oil on a pan. I also added bananas, cinnamon, almond butter, and maple syrup as toppings.
