Chocolate Avocado Mousse + Brownie Oat Crumble & Banana Parfait {Vegan & Guilt Free}

Let me just start off by saying… if I have learned anything in my many years on this Earth (15 years haha), it’s that the longer and more complicated the name of a dish is, the better it is. I don’t think I need to say more.

INGREDIENTS

1.) For the Chocolate “Brownie” Crumble

– 1 cup old fashioned oats

– 2 large medjool dates soaked in hot water for 5 minutes

– 1 1/2 Tablespoons coco powder

– 1/4 cup unsalted nuts (I used Brazil nuts)

– 1 teaspoon maca powder (optional)

2.) For the Frozen Mousse:

– 2 frozen bananas

– 1/2 fresh avocado

– 2 Tablespoons coco powder

– 1 teaspoon vanilla extract

INSTRUCTIONS:

1. For the brownie mixture, you are basically making chocolate Rawnola (aka raw granola). It is wayyy simpler and healthier than normal brownies which is a huge win!!! Simply blend all the brownie ingredients in a food processor until it is mixed and clumps start to form. Don’t over pulse it or it will be too crumbly.

2. Making the mousse is just as easy as making the brownie mixture. Just blend in a food processor. You may need to add a touch of milk to help it blend easier, but for the most part it should get to a great consistency on its own if you are patient with it.

3. Place the mousse in the freezer while you cut up the banana. Cut the banana into about 1/4 inch slices.

4. Now comes the fun part because you get to do all the layering. Begin by placing an even layer of the bananas at the bottom. Then add the brownie crumble and mousse. Repeat this as many times as you choose. I did 3 layers all in all and topped it with Cocoa nibs.

5. It is best served to others (or just yourself ) immediately so the mouse does not melt and become less thick. If you are wanting to wait a little longer to serve, you can place it in the freezer until ready.
