Ombre Pitaya Smoothie – Vegan

Several years ago, ombré was all the hype. It was consuming everything, from hair, to cakes. It was an especially predominant element in the design industry. I vividly remember contemplating over whether to paint one of my bedroom walls ombré peach.

Today, smoothies are all the hype. What used to be the simple “frozen berries and yogurt” smoothie has now evolved into an abundance of Instagram feeds saturated with açai smoothies placed in coconut bowls with gourmet toppings and 12 dollar price tags. The other day I saw a smoothie bowl on Instagram with actual gold sheets laced on top. We are living in the age of extravagant smoothie bowls, and quite honestly, I’m not mad about it!

This smoothie bowl happens to be a collision of the two trends. Oh, and it’s PINK! Does it get any more adorable than that?

So the next time you have a Saturday with some extra time, do yourself a favor and make this cute breakfast. It really doesn’t take much more time than any old smoothie bowl!

The next time you have a Saturday with some extra time, do yourself a favor and make this cute breakfast. it really doesn’t take anymore time than any old smoothie.

Ingredients

  • 3.5 ounces frozen pitaya packet

  • ½ cup frozen pineapple or mango

  • 2 frozen bananas (cut in half)

  • coconut milk (for thinning)

Directions

  • Slightly thaw the pitaya packet by running it under warm water for 30 seconds. Empty the packet into a blender, along with the mango or pineapple. Blend until smooth. If necessary, add a splash of coconut milk to help it blend. Pour into a clear jar 1 inch of the way up.
  • Add ½ of a frozen banana to the blender and blend until smooth. Again, layer into the jar one inch of the way. Repeat this step 3 more times until all of the bananas is used up. Continue adding coconut milk as needed. There should be a total of 5 shades.
  • Serve the smoothie as is or top with fruit, coconut flakes, granola, or any other additives of choice.
