Healthy Apple Crumble in a Mug

Ingredients
- crumble mixture
½ cup rolled oats
2 Tablespoons almond flour
2 Tablespoons coconut oil, melted
2 Tablespoons maple syrup
1/2 teaspoon ground cinnamon
- apple mixture
2 cups apples, cubed (roughly 2-3 large apples)
2 Tablespoons walnuts, chopped
1 tablespoon almond flour
1 teaspoon fresh lemon juice
½ teaspoon ground cinnamon
Directions
- Combine the crumble ingredients and layer 2 Tablespoons of the mixture into the bottom of 2 large mugs.
- Toss the cubed apples with the rest of the apple mix ingredients. Divide it amongst the mugs.
- Place the remaining crumble on top of the apple mix.
- Microwave for 2-3 minutes and serve while hot. Top with this healthy whipped cream, ice cream, date caramel sauce, or honey.
Notes
- You can bake the crumble in ramekins placed in the oven at 375 degrees Fahrenheit for 10-12 minutes.
- If you want to make this ahead of time or don’t want to cook both the crumbles at the same time, you can cover a mug up with cling wrap and store in the fridge for up to two days before heating in the microwave to cook.
- Other kinds of nuts can be substituted for almonds.
- I prefer to peel the apples, but that is optional.
- Different fruits can be used in place of apples. My favorite include peaches, strawberries, and blackberries.
- Add more or less cinnamon and maple syrup to taste.
