hoursThis chocolate coconut chia seed pudding is incredibly indulgent and decadent. It comes together in minutes and makes the most excellent, satiating breakfast or dessert.
Ingredients
1/2 cup canned coconut milk
2 Tablespoons chia seeds
1 Tablespoon cacao powder
1-3 teaspoons maple syrup, honey, or another liquid sweetener
1/2 teaspoon vanilla extract
Directions
- Add all ingredients to a mason jar, screw the lid on, and shake until everything is distributed. Place in the fridge and let sit for at least 4 hours or overnight.
- Serve as is or go a step further and blend the pudding in a blender to make it extra smooth.
- Pour the pudding into a bowl and top with cherries, coconut, granola, whipped cream, or whatever else you desire.
Notes
- The longer the pudding sits, the thicker it will become.
- Any dairy-free milk can be subbed for canned coconut milk, but it is the canned milk that yields the rich and creamy components of this pudding.
- Omit cacao powder for vanilla pudding.
