Best Cashew Chocolate Butter

I first sampled cashew butter several years ago. At that time, I had never heard of it before. Peanut butter and almond butter were the only nut butters available at most markets. I immediately fell in love with the irresistible texture and neutral flavor of cashew butter. It is because of these reasons I believe that cashew butter is the superior nut butter. Its only fault is containing such an extensive price tag. I don’t know why it never occurred to me until recently that cashew butter can be simply recreated at home.

What makes this recipe especially exceptional is the fusion of cashews and chocolate. It elicits an irresistibly decadent brownie batter-like dessert that is so good you can consume it by the spoon.

What makes this recipe especially exceptional is the fusion of cashews and chocolate. It elicits an irresistibly decadent brownie batter-like dessert that is so good you can consume it by the spoon.

Ingredients

  • 2 cups cashews

  • 2 tablespoons cacao or cocoa powder

  • 1 Tablespoon maple syrup, coconut sugar, honey, or any other unrefined sweetener

  • ¼ teaspoon salt (if using unsalted cashews)

  • 1 teaspoon vanilla extract (optional)

Directions

  • Add the cashews to a high power blender or a food processor. I find a blender makes the butter come together much quicker.
  • Process until smooth and creamy and it reaches your desired consistency. If you wish it to be thick, blend for less time. If you want it to be thin, blend for longer. Scrape down the sides as needed. If at first it is still really thick, just keep blending. It requires patience. This should take at least 5 minutes.
  • Once the butter reaches your desired consistency, blend in the remaining ingredients until fully incorporated. 
  • Store the butter in a lidded glass jar in the fridge for up to 2-3 months. 

Notes

  • This nut butter is subtly sweetened. Add more sweetener if you desire. 
  • Add this nut butter to smoothies or oatmeal or serve with pretzels, crackers, cucumber, berries, or toast. 
  • You can make this with a different variety of nuts, but it will obtain a different flavor profile.
  • Try implementing optional additives such as cinnamon, espresso beans, or mint extract.
