ZOATS – Vegan Zucchini Bread Spiced Oatmeal {Creamy & Delicious)
I love this recipe because it brings me back to my childhood. When I was young, I used to be obsessed with making zucchini bread. I know, that’s definitely the most random thing for an eleven year old to be obsessed with, but it’s true. I was so incredibly proud of my little zucchini bread loafs, and I remember that I used to give them away to people. Looking back, I realize people probably had to force a smile and a thank you when they were told I made them ZUCCHINI BREAD haha. But anyways, it was so much yummier than what it sounds like, and I’m so happy to be recreating a childhood favorite into an everyday breakfast that is… OATS! I hope you love this recipe as much as I do!
INGREDIENTS
* 1/2 cup super finely grated zucchini (about 1 medium sized zucchini)
* 1/2 cup oats
* 1 cup plant milk
* 1 1/2 teaspoon cinnamon
* 1 teaspoon chia seeds
* 1 teaspoon flaxseed
* 1 teaspoon hemp seeds
optional:
* 1 date or 1 Tablespoon sweetener of choice
* 1 scoop protein powder
INSTRUCTIONS
1. Combine all the ingredients but the fresh fruit in a small pot. Heat at low medium heat and bring to a slight simmer. Stir continuously until you reach the desired consistency. Lower the heat if necessary.
2. The amount of time you need to cook the oats will vary depending on the type of oats you are using. Refer to your oat’s packaging for a guide on how long to cook them.
3. Transfer the oatmeal to a bowl and top with whatever you choose. Some of my favorite toppings for this oatmeal recipe are nuts, almond butter, dark chocolate, or even fresh fruit.
