Peaches N’ Blackberry Superfood Oats + Coconut Maple Glaze {VEGAN}

INGREDIENTS

1.) For the Oatmeal:

1 cup oats, old fashioned or rolled

1 1/2 cup plant milk

1/2 ripe banana, mashed

2 Tablespoon each of chia seeds, flaxseed, and hemp seeds

1 ripe peach, cut in cubes

1 cup blackberries, frozen or fresh

1/2 teaspoon vanilla

1/2 teaspoon cinnamon

1 Tablespoon maple syrup

2.) For the Coconut Drizzle

3 Tablespoons canned coconut cream, full fat

1/8 teaspoon vanilla extract

1/4 teaspoon maple syrup

1/2 teaspoon cinnamon

INSTRUCTIONS

1. Add the oats, milk, flaxseed, chia seeds, hemp seeds, banana, maple syrup, vanilla, and cinnamon to a pot. Cook for about 5 minutes over medium heat, making sure to stir every once in a while to prevent burning.

2. While the oats cook, make the coconut glaze my stirring all the ingredients in a small bowl.

3. When the oats are about finished cooking, add most of the fruit to the mixture. Save some of the fruit on the side.

4. Pour the oatmeal in a bowl and top with the coconut maple glaze, and the left over fruit.
