Healthy Matcha Mint Milkshake W/ Dark Chocolate Hard Shell (Mint Chocolate Chip Shake) VEGAN
For just about as long as I can remember, mint chocolate chip ice cream has been my ALL TIME favorite ice cream flavor. I mean, it’s such a great go-to! I will undeniably debate with anyone who thinks otherwise haha. Ok, maybe to some people it doesn’t seem like a huge deal what the best ice cream flavor is, but I can’t think of too many things that are above ice cream on the popularity scale. I mean, what’s not to loveee about it? It’s soft and creamy, and melts in your mouth, and halts sugar cravings, and comes in a wide variety of flavors, and I could clearly go on till eternity!😂 I will admit though, that there happens to be one excruciating flaw in ice cream, and that is the amount bad ingredients it contains (normally *wink wink*). For someone who only enjoys ice cream on special occasions, this may seem like no biggie… but if you are someone that feels like you owe ice cream a lifelong committed relationship, and hence often reach for the court sized amount that remains in your freezer (lol), then this can be a SERIOUS problem!
If this description describes you, there is no need to worry. These days, just about anything can be made nutritious! Ahhh, aren’t you happy to live in a century where ice cream can be made healthy?!? I’m pretty sure people living in the middle ages couldn’t do that, am I right?😂
In all seriousness now, my huge obsession for mint chocolate chip ice cream actually lead to something good and sparked an idea in my head! I decided to create the just as magical, “sister” of mint chocolate chip ice cream…the mint chocolate chip MILKSHAKE! I am currently getting very excited talking about food (story of my life🤪) and will hurry up this paragraph so you can get the recipe, but I just need to elaborate how amazing this milkshake is! It contains only nutritious ingredients like banana, oats, matcha powder (for the naturally dyed green pigment that is totally essential to every mint chocolate chip flavored item), cocoa powder, and coconut oil. I mean, who would have thought that a childhood favorite like mint chocolate chip ice cream could be renovated into a modern twist that is acceptable to drink every day?
Healthy Matcha Mint Vegan Milkshake W/ Dark Chocolate Hard Shell
Servings: 2 small or 1 large
Time: 5 minutes
INGREDIENTS
1.) For the Matcha Mint Milkshake:
- 2 frozen bananas (very ripe)
- 1 1/2 cups plant milk (I prefer canned coconut milk for this)
- 1/4 cup oats
- 1-2 teaspoons matcha powder
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon mint extract (or small handful fresh mint leaves)
- 1 teaspoon cashew butter (optional)
2.) For the Chocolate Hardshell:
- 1 Tablespoon cocoa powder
- 2 teaspoons coconut oil, melted
- 1 teaspoon maple syrup
- 1 teaspoon water
- 1/2 teaspoon vanilla extract (optional)
INSTRUCTIONS
1. Whisk together all of the chocolate hardshell ingredients shortly before making the shake so the hard shell doesn’t firm up too soon.
2. Add all the milkshake ingredients to a blender and blend until smooth.
3. Drizzle some of the chocolate hardshell on the inside of the cup/cups being used. Pour in the shake and drizzle more hardshell on top.
NOTE
*if you would like a really chocolaty mint milkshake, I would recommend doubling the chocolate hard shell’s portions.
