Healthy Maca Tahini Pumpkin Latte {VEGAN} *very creamy*

Ok, obviously I’m definitely a huge fan of pumpkin spice lattes and all, (frankly, if I wrote other wise, I’d be afraid of the “pumpkin spice latte” fan base coming for me🤪) but I will be the first to say that I get tired of the flavor combo after a while. I know, *gasp!* I mean, I can have it a few times, but after about the 5th pumpkin spiced flavored item I’ve had in the season, I am ready for Christmas flavors haha. Luckily, I created a fall flavor combination that still involves pumpkin, but is great for when you are “pumpkin spice burnt out!”haha.

Maca powder in this drink adds an amazing butterscotch-like flavor, while the smooth tahini contributes a creamy texture and comforting flavor. Oh, and I almost forgot about the pumpkin, (again, don’t come after me pumpkin spiced lovers😂) but you probably already know what pumpkin tastes like lol. Together, these ingredients create a wonderful blend that is DEFINITELY drool worthy. Oh, and I haven’t even mentioned all the health benefits that come from drinking this warm cup of joy! I have had this drink many times, and just writing this post is making it almost impossible for me to resist making it this instant. So if you are anything like me at the moment, I will stop rambling so you can get to the recipe 🙂

Healthy Creamy Maca Tahini Pumpkin Latte {VEGAN}

Servings: 1

Time: 10 minutes

 

INGREDIENTS

  • 1 1/2 cup plant milk or 1/2 cup milk and 8 oz. (1 cup) coffee
  • 1/4 cup pumpkin purée, unsweetened
  • 2-3 teaspoons maple syrup (or honey if not vegan)
  • 1/2 teaspoon maca powder
  • 1 teaspoon tahini or nut butter butter of choice
  • 1/2 teaspoon cinnamon or pumpkin pie spice
  • 1/4 teaspoon vanilla extract

INSTRUCTIONS

1. turn a stovetop on to low medium heat. Add all the ingredients to a pot and stir until combined.

2. bring the mix to a light simmer and lower the heat.

3. when the drink has become the the warmth you desire, pour into a mug and enjoy! If you want to go a step farther, you can drizzle tahini on the side of your cup for a more decorative presentation.
