HEALTHY Blackberry Banana Icecream + Mango W/ Chocolate Rawnola (Raw Granola) – Vegan
I made this creation when I started my first day of online schooling. I woke up extra early to make it and attempt to get a good start on the day.
The banana ice cream is so refreshing and great for mornings when you don’t want something heavy to weigh you down. Also, I’ve been obsessed with the combo of banana ice cream and rawnola. If you haven’t heard of rawnola before, it’s basically just granola that is raw. It is made with a base of dates and oats, and when put on ice cream, it taste almost identical to cookie dough. Now, if that doesn’t sound good to you, then I don’t know what does! Feel free to get creative with whatever toppings you put in the ice cream. Today I used Blackberries, but some of my other FAVS are raspberries, cocoa powder, peanut butter, blueberries, or even matcha powder.
INGREDIENTS
1.) For the Ice cream:
2 large frozen banana
2/3 cups frozen blackberries
3 Tablespoons coconut (Optional)
1/2 of a large mango
2.) For the Rawnola:
1/4 cup oats
3-6 medjool dates
1 Tablespoon cocoa powder
INSTRUCTIONS:
1. Start by making the rawnola. Put all the ingredients in a food processor and pulse until clumps form. Start with 3 dates to begin with, and add more if it needs to be more clumpy or sweet.
2. When You have a nice crumbly texture, you can start using your hands to “scrunch” up the mixture. Basically, clump the crumbs with the sticky parts of the mixture so it isn’t too powdery.
3. For the ice cream, add the frozen banana (and coconut, if using) to a high powered food processor and blend. Keep blending until it is creamy. If you have to, add a dash of liquid to help the Blender out. Add the blackberries to the food processor as well. I chose to only blend the blackberries in slightly because I wanted to have blackberry chunks, but you can also blend until smooth.
4. To serve, add the Ice cream to a bowl along with the rawnola and other toppings. I added half a mango and extra coconut as toppings.
