Filling Apple-Pomegranate & Banana Spiced Oat Smoothie {Vegan}

There are many reasons to love the fall. Many people’s favorite aspects include the weather, colored trees, the fall aroma, or thanksgiving… If I’m being honest though, one of the things I look most forward to about fall is POMEGRANATES being in season! It might seem like a strange obsession, but pomegranates are so magical! I love all the wonderful citrus flavor that is bundled up into little seed-like arils that burst in your mouth. So, when I discovered that my grocery store was now selling pomegranates, I may have gotten a little too excited and gotten…a few too many. Pomegranates have always been one of my all-time favorite fruits. I know it’s just the beginning of the season for pomegranates but I didn’t want the store to run out of them and me not be able to get my hands on any more. That would be devastating! I decided a positive alternative would be to get extra pomegranates without having any clue what to do with them.

While I greatly enjoyed the first several pomegranates plain Jane, I shortly came to the realization that it would be better to take advantage of the abundant supply of pomegranates and turn it into a blog post haha! That is how this recipe came to be, and I would say it was a great ending to a conundrum. The involvement of an array of fall flavors including apple, spice, oats, and pomegranate all in one drinks makes it impeccably hard to pass up. Yep, that’s right people. You can have all the flavors of fall in no time with this delicious drink. It might actually be a crime if you go all fall without making it. So, the pressure is on!

Filling Apple-Pomegranate & Banana Spiced Oat Smoothie {Vegan}

Serving: 1

Time: 5-10 minutes

INGREDIENTS

• 1 frozen banana, very ripe

• 1 cup apple, cubed

• 1/2-1 cup unsweetened plant milk, vanilla flavored

• 1/2 cup pomegranate seeds

• 1/4 cup nuts of choice

• 1/4 cup oatmeal

• 1 Tablespoon flaxseed

• 1/2 teaspoon cinnamon

• 1 teaspoon fresh ginger

• 1 teaspoon lemon juice

INSTRUCTIONS

1. Add all the ingredients to a high-speed blender. Blend until a smooth consistency is formed.

2. When the smoothie is thoroughly blended, pour into a glass and top with extra pomegranate seeds and… Of course, don’t forget to enjoy!

NOTE

  • You can easily create a smoothie bowl out of this recipe by simply adding less milk to the blender.
