Banana-Lemon Cream Pie Oatmeal W/ Berry Purée – Naturally Sweetened & VEGAN
I am writing this post 10 minutes after creating this recipe, and I can honestly tell you this is my favorite oatmeal recipe EVER! In fact, it’s so good that I accidentally burned myself trying to get the last scraps of oatmeal left in the pan (but not regrets). The banana in this oatmeal makes it incredibly creamy, and when paired with the citrus from the lemon, it tastes almost too good… If that’s even a thing. I’m probably going to make this again tomorrow and double the recipe but eat all of it to myself because #YOLO!
INGREDIENTS
1.) For the Oats
1 cup oats
1 cup plant milk
1 mashed RIPE banana
1 teaspoon flaxseed
1 teaspoon chia seed
1/2 teaspoon vanilla extract
1/2-1 teaspoon lemon zest
1 scoop protein powder (optional)
2.) For the Berry Purée
1/3 cup mixed berries
1 teaspoon chia seeds
1 teaspoon lemon juice
INSTRUCTIONS
1. Add all the oatmeal ingredients to a small pot that is heated to low medium heat. Stir all continuously so it does not burn. The amount of time you need to cook the oats will vary depending on the type of oats you are using. Refer the your oat’s packaging for an exact time of how long to cook them.
2. While the oats cook, make the berry purée. Blend the berries (I used thawed frozen berries) and lemon juice in a blender, or mash them with a fork. Stir in the chia seeds and set aside.
3. Pour the warm oatmeal into a bowl, and top with the berry purée and more lemon zest!
