Almond Butter Perfect Bars Copycat With Collagen

minutesThese bars taste like the delectable Perfect Bars but without the expensive price tag. Plus, they come together within minutes!
Ingredients
1 cup almond butter
¼ cup coconut oil, room temperature (optional but helps with texture)
¼ cup maple syrup or honey (add more or less to taste)
¾ cup vital proteins collagen or vanilla protein powder – see notes
Optional: ¼ cup stevia-sweetened chocolate chips
Directions
- Whisk the almond butter, coconut oil, and maple syrup together.
- Stir in the collagen. Add more if the dough is too sticky.
- Fold in the chocolate chips if using and press the dough firmly into an 8×8 dish lined with parchment paper. Cool in the fridge for roughly 20 minutes before slicing into squares and serving.
- Store in the fridge for up to a week, or the freezer for up to 3 months
Notes
- The amount of collagen you use varies depending on the texture of your nut butter. Use more if you use really runny nut butter, and vise versa if using thicker nut butter. Also, use less collagen if you omit the coconut oil. You want to form a thick dough that can be pressed.
- If you decide to use protein powder, the result may include a different texture since protein powders vary.
- Use peanut butter in place of almond butter if you want it to taste more like the Perfect version. You will probably need less collagen if doing so.
