Creamy Watermelon Coconut Soft Serve Ice Cream Made in a Blender

This watermelon coconut soft serve ice cream comes together in minutes and is made a blender. You will never have to feel guilty for indulging in this 3 ingredient, 100% fruit-sweetened ice cream!

Ingredients

  • 2 heaping cups cubed and frozen watermelon 

  • 1 large banana or two small bananas, sliced and frozen

  • ½ cup full-fat canned coconut milk or cream – cooled in the fridge

Directions

  • Add the frozen banana and ½ cup cooled coconut milk to a high-speed blender or food processor. Pulse to break down the banana. Proceed to add the frozen watermelon and continue to blend until completely smooth and creamy. It should reach a soft-serve consistency. Scrape down the sides of the blender with a blender and add more coconut milk if you desire a more soft icecream.

Notes

  • You can fold in additives such as chocolate chips, mint, basil, other fruit, coconut, etc.
