Blender Oat Pancakes – No Banana
Have you seen those banana pancake recipes? I have attempted a sizable collection of various banana pancake recipes. While these recipes suffice when I desire a banana bread type arrangement, the potent banana flavor can not satiate the standard “pancake” craving that is obtained with the standard pancake mix. Fortunately, I have found an alternative fruit to banana in pancakes, and it is APPLES. Apples elicit a surprisingly neutral flavor and yield the desired intense volume. Plus, it is great for anyone that may be allergic to or despise banana!
Blender Oat Pancakes – No Banana

Ingredients
1 cup oats
2 apples, cubed and steamed until tender*
2 eggs
1 teaspoon baking powder
- optional
1 teaspoon cinnamon
½ teaspoon vanilla extract
Directions
- Add the oats to a blender and pulse until flour forms.
- Add all the remaining ingredients (except baking powder) to the blender and blend until the apples are completely broken down and the mixture develops into a smooth batter. Stir in the baking powder manually.
- Pour the batter in ¼ cup increments onto a pan that is heated over medium heat and sprayed with coconut oil. Cook until browned on both sides.
Notes
- Make this recipe even simpler by substituting steamed apples for ¼ cup of applesauce.
- The simplest way to steam the apples is by microwaving them for roughly 3 minutes.
- Add a splash of almond milk to the batter if you desire the batter and pancakes to be thinner. This will also result in more pancakes.
